  • Place cilantro, walnuts, garlic, salt, pepper, lime juice, and olive oil in a food processor and blend until smooth.
  • Fill each corn tortilla with 1/4 cup shredded gouda and fold in half. Cook on a hot grill or grill pan until cheese is melted, about 1-2 minutes per side.
  • Serve with the cilantro pesto.
