Golden Nugget Carrot Cookies With Orange Icing

• Yields: 4 dozen

ingredients

• 1⁄2 cup granulated sugar
• 1⁄4 cup brown sugar, packed
• 3⁄4 cup Crisco or 3/4 cup vegetable shortening
• 1 large egg
• 2 cups all-purpose flour
• 1 1⁄2 teaspoons baking powder
• 1⁄2 teaspoon salt
• 1 cup cooked mashed carrot
• 1 teaspoon vanilla extract
• 1 cup chopped walnuts

• ORANGE ICING

• 1 cup powdered sugar
• 2 teaspoons grated orange rind
• 2 tablespoons fresh orange juice

directions

1. Cream sugara and shortening -- add egg, well beaten.
2. Sift dry ingredients together and add alternately with mashed carrots. Add vanilla.
3. Stir in chopped walnuts.
4. Drop by rounded teaspoons onto greased cookie sheet.
5. Bake at 4008 for 8-10 minutes.
6. Frost with orange icing while still a little warm
