- 1 cup butter, softened
- 1⁄2 cup brown sugar
- 1⁄2 cup white sugar
- 4 eggs
- 1 cup applesauce (unsweetened or cinnamon are fine)
- 1 tablespoon vanilla
- 1 teaspoon salt
- 2 teaspoons baking soda
- 3 cups oats
- 2 2⁄3 cups flour
- 1⁄2 cup wheat germ (you can add as much as you like)
- 1⁄4 cup powdered milk
- 1 cup chocolate chips
directions
- Heat oven to 350.
- Cream butter and sugars. Mix in eggs, applesauce, and vanilla. Add dry ingredients until combined. Fold in chocolate chips. (If you have a kitchen mixer you can just throw all the ingredients in together and turn it on until it has the consistency of cookie dough.).
- Spread batter in bar pan and bake 20 to 30 minutes or until golden brown.
- If using a 9 x 11 cake pan bake 40 minutes.
- These can also be made as cookies - bake 10 to 15 minutes.

These oatmeal bars are great! I admit I substituted half the butter with ground flax seed (6 T. with enough water to equal half a cup) and left out the chocolate chips to make them a little healthier, but they still turned out tasting good. After cutting the entire sheet pan into squares I froze them individually. Just let them thaw naturally and in less than an hour they're ready to eat! Almost forgot - I added a teaspoon of cinnamon to make up for the lack of chocolate chips. Thanks for posting this super breakfast bar recipe!
