  • Preheat oven to 350°F.
  • Halve the potatoes and scoop out the centers, leaving unbroken shells.
  • Cook centers in boiling salted water until tender.
  • Drain and mash.
  • Combine with remaining ingredients.
  • Stuff into shells.
  • Place in a greased baking dish.
  • Bake for 1 hour.

  1. So good! I made a few changes, though. I didn't even try to scoop out the raw potatoes. I baked them, then scooped out the insides. I sauteed the onions and sausage, added cheese and filled the shells, baked for 30 mn. Yum! Thanks for posting! Made for PAC 2012
