Garlicky Butternut Squash Butter

  • Cut the squash (you can substitute pumpkin) into 1 inch cubes.
  • peel 4 large cloves of garlic.
  • toss with olive oil and coarse salt.
  • Roast the squash and garlic and rosemary in the oven until tender (about 35 minutes).
  • Discard rosemary.
  • Allow to cool then process in a food processor with the butter.
  • Scrape into a tiny serving bowl.
  • serve with crusty french bread.

I love to cook and have little time to do it. Weekends we make a date of it, hanging out in the kitchen. I cook and my husband plays the guitar. My children love to help out. My seven-year-old son is learning all about herbs in the garden and how to separate eggs, and my 11-year-old daughter is "flying solo" in the kitchen.
