Full Flavored Iced Tea

"I never was a fan of ice tea until I made it this way. The recipe comes from Cook's Illustrated and makes a nice strong tea."

  • 5 tablespoons tea (about 5 teabags)
  • 1 quart water
  • 1 -6 tablespoon sugar
  • 1 quart ice, plus more for the glass

directions

  • Heat the tea bags and water in a medium, non reactive saucepan over medium heat until dark, very steamy and small bubbles form on the bottom and sides (instant read thermometer will register about 190), 10 to 15 minutes.
  • Off heat steep 3 minutes (don't steep any longer or it may get bitter).
  • Remove and discard the tea bags and pour tea into a pitcher.
  • Stir in sugar until dissolved.
  • Stir in ice until melted.
  • Serve in ice filled glasses.
