French Strawberry Tart

- 2 (8 ounce) packages cream cheese, softened
- 1⁄4 cup sugar
- 1 -2 teaspoon grated lemon peel
- 2 tablespoons lemon juice
- 1 (9 inch) baked prepared tart shells (posted separately as Rich Tart Shell(or use store bought or your favorite recipe)
- 1 quart fresh strawberries, sliced
- 2 tablespoons cornstarch
- 1⁄4 cup cold water
- 1 (12 ounce) jar strawberry preserves
- 2 tablespoons lemon juice
directions
- Combine cream cheese, sugar, lemon peel, and lemon juice; mix well and spread in baked shell. Top with berries.
- Combine cornstarch and water; add preserves.
- Bring to boiling, stirring constantly; cook and stir until thick and clear.
- Remove from heat; add 2 tablespoons lemon juice.
- Cool to room temperature and pour over berries. Chill until set.
