ingredients
- 1 cup flour
- 2 teaspoons baking powder
- 1 1⁄4 teaspoons salt
- 1 teaspoon sugar
- 1 tablespoon oil
- 1⁄2 cup milk
- 1⁄2 cup water
- 1 lb haddock fillet (or your favorite type of fish)
- salt and pepper
- flour, for dipping fish
- oil (for frying)
directions
- Mix and sift dry ingredients. Mix oil, water and milk. Gradually whisk liquid ingredients into dry ingredients. Cut fillets into 3 inch pieces. Season with salt and pepper. Dip fish in flour. Shake off excess flour and dip in batter. Fry in oil.

Awesome! I've made several fish and chip recipes on the site and this one is now my favorite. Several times before I've had trouble with the batter sticking to the fish and ended up with more like scrambled fish by the end. This batter stuck to the fish really well. It came out very crispy just the way we like it. I'm guessing that coating the fish with the flour before the batter is what did the trick. Thanks Cookin Canadian for sharing an excellent recipe.
