Fennel With Apples and French Vinaigrette

- 2 large fennel bulbs
- 1 tart green apple
- 1 teaspoon Dijon mustard
- 2 tablespoons balsamic vinegar
- olive oil
- 1 fresh lemon, juice of
- salt and pepper
directions
- Cut the leaves off the fennel, and thoroughly clean the stalks and bottom of the bulb. Cut into 1 inch pieces.
- Peel and cut the apple into thin 1 inch pieces. Add to the fennel.
- Drizzle with olive oil.
- In a small bowl, mix the lemon juice, vinegar and mustard. Season with salt and a bit of black pepper to taste. Add to the fennel mixture, mix and serve.
