- 2 cups finely cut rhubarb
- 1 1⁄2 cups brown sugar
- 1⁄2 cup butter
- 1 egg
- 1 teaspoon baking soda
- 2 cups flour
- 1 teaspoon vanilla
- 1 cup sour milk (add 1 Tbs vinegar to milk)
- 1⁄4 cup brown sugar
- 1 teaspoon cinnamon
directions
- Mix first 8 ingredients together in a bowl.
- Dump into a greased 9x13 pan.
- Sprinkle on the 1/4 c brown sugar and then the cinnamon.
- Bake at 350 30-40 minutes or until cake springs back when touched.
- Serve warm.
