- 1 eggplant
- 2 eggs, beaten
- 1 tablespoon olive oil
- 1⁄2 lb grated mozzarella cheese
- 1⁄2 cup parmesan cheese
- 1⁄2 cup flour
- 1 quart marinara sauce or 1 quart spaghetti sauce
directions
- Slice eggplant lengthwise, aps 1/4" thick.
- Coat slices in flour, then dip in beaten egg.
- Fry in Olive Oil until browned and tender.
- Make layers in a casserole dish with eggplant, then sauce, then mozzarella.
- Top with parmesan cheese.
- Bake, uncovered @ 350 degrees for 40 minutes.
