Cookie Dough
- 1⁄2 cup shortening
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1⁄2 cup milk
- 3 1⁄2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda

Date Filling
- 1 cup chopped dates
- 1 cup raisins
- 1⁄2 cup chopped walnuts
- 2 -3 teaspoons lemon juice
- 1⁄4 - 1⁄2 cup sugar
- water, to start cooking

Date Filling:
- Add ingredients into saucepan with just enough water to start cooking (up to 1/2 cup).
- Cook over low-medium heat until dates are softened and mixture is thick.
- Allow to cool slightly.

Cookie Dough:
- Cream together shortening, egg and sugar until fluffy.
- Incorporate milk and vanilla.
- Sift together dry ingredients and add slowly to wet mixture.
- Mix together until incorporated, careful to not overmix.
- Chill dough for 30 minutes for easier rolling (although my mother skips this step).
- Roll out dough on lightly floured surface to 1/8" thickness.
- Cut rounds (one for bottom, one for top) using round cookie-cutter or drinking glass.
- Place one teaspoon raspberry jam or date filling on bottom round.
- Place top round over filled bottom.
- Lightly press down edges with tines of a fork to seal cookie.
- Bake at 400 degrees until edges are lightly browned, 10-12 minutes.
