- 8 Campari tomatoes, cut into quarters
- 1⁄2 cup red onion, sliced
- 1⁄2 cup English cucumber, sliced
- 1⁄4 cup banana pepper, sliced
- 1⁄2 cup olive oil
- 1⁄8 teaspoon salt, to taste
- 1⁄8 teaspoon black pepper, to taste
directions
- Cut up tomatoes into big chunks or quarters and put into bowl, with all juices. Add red onion, cucumber and banana pepper. Add olive oil and season to taste.
- Serve with fresh bread and enjoy!
- For variation, add 1/2 cup crumbled feta cheese.

This salad has a good flavor however; we all found the olive oil to be a bit heavy. I will make this again especially in the summer with fresh garden tomatoes however I will either reduce the amount of olive oil greatly or omit it altogether. Thanks for sharing your recipe. Made and reviewed for Spring 2011 PAC.
