  • Cube chicken into about 1" cubes.
  • Brown all sides of the chicken in peanut oil on medium.
  • Add coconut milk and curry paste, reduce heat to simmer.
  • drain chickpeas and add.
  • Cook until the sauce is reduced.
  • Add salt and rice vinegar.
  • serve over rice.
