Easy Strawberry or Raspberry Yoghurt Ice Cream

"Delicious ice cream. I've made it using strawberries but you can use raspberries instead. I used 1 1/2 cups sugar instead of the 1 cup to take away the tanginess from the yoghurt. The recipe suggests to set aside the mixture of processed strawberries, sugar and juices for 2 hours in order to intensify the flavour of the fruit--you can skip this step."

  • Wash and remove the green part of the strawberries.
  • Process the strawberries in a food processor.
  • Squeeze the orange and lemon and place the juice in the strawberry mixture, along with the sugar. (Optional: set the mixture aside for 2 hours to intensify the flavour of the fruit).
  • Freeze in an ice cream maker according to manufacturer's instructions.
  • Move into the freezer.

I'm a Greek-Australian living in Melbourne at the moment with my husband and three kids (boy 9, girl 6, boy 2); my parents and brother also live nearby and are my unconditional supporters/ helpers. Admittedly, my husband is the expert at cooking Asian curries and other dishes; I can also claim many successes in this cuisine, though I need to spend more time reading and concentrating on the recipe.
