Easy Hobo Casserole

"An easy crock pot recipie we've always had. You can use any kind of meat,but sausage is our favorite."

• Ingredients: 3
• Serves: 8

ingredients

• 8 medium potatoes, diced
• 2 (16 ounce) cans corn, undrained
• 1 lb smoked sausage, diced

directions

1. Combine all ingredients.
2. Place in greased crock pot, cook on high about 2 hours until potatoes are tender.

I made a few very minor changes. I used 1 can of corn, 3 small red potatoes, smoked sausage. First, I wanted a quicker meal so I made it on the stove. Second, I didn't see many juices in it on the stove, so I added water and a bouillon cube. This gave it some flavor, and added salt and pepper. Was ready in less than a half hour. Excellent meal for one or two!

Made in my crockette, I used 2 potatoes, 1 8 oz can corn, and 2 bun-size sausages. Great for dinner and leftover lunch meal. Convenient, simple, and tastes good! Thanks for posting Mom10. Made for Fall 2009 PAC.
