ingredients

• 1 1⁄2 cups all-purpose flour
• 1 teaspoon baking powder
• 1 pinch salt
• 1⁄4 cup unsweetened cocoa powder
• 1⁄2 cup milk
• 1 cup sugar
• 1 egg
• 1⁄3 cup oil
• 1 teaspoon vanilla
• 1⁄2 cup boiling water

directions

1. Preheat oven to 350 degrees Fahrenheit. Line a 12 cup muffin tin with liners.
2. Whisk dry ingredients in medium bowl until combined.
3. Add remaining ingredients to bowl, saving the hot water for last, and slowly stir into the dry ingredients until a batter forms.
4. Add the hot water and stir well.
5. Distribute into the muffin tin and bake for 15 to 20 minutes until toothpick comes out clean. Cool before enjoying frosted or plain.
