- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 4 tablespoons vegetable oil
- 1 (15 ounce) can chili (chicken or vegetarian chili is best for this dish)
- 2 cups cooked chicken, chopped
- 1 1⁄2 1 1/2 cups monterey jack pepper cheese or 1 1/2 cups cheddar cheese
directions
- Heat vegetable oil on medium high heat, add the Simply Potatoes Diced Potatoes with Onions, and cook according to directions until lightly browned.
- Add the chili and chicken, and mix thoroughly. Continue cooking until the mixture is heated through.
- Let sit on medium heat without stirring for 2-3 minutes to develop a crust on the bottom.
- Sprinkle with shredded cheese and cover pan off heat to melt the cheese OR sprinkle individual servings with shredded cheese.
