- 8 cups vegetable stock
- 1 1⁄2 cups dried lentils
- 3⁄4 cup dried black-eyed peas
- 3 medium tomatoes, chopped
- 1⁄2 cup chopped carrot
- 1⁄2 cup chopped celery
- 1⁄2 cup chopped onion
- 1 teaspoon minced garlic
- 3⁄4 teaspoon dried thyme
- 3⁄4 teaspoon dried oregano
- 1 bay leaf
- salt and pepper
directions
- Combine all ingredients except salt and pepper in slow cooker.
- Cover and cook on low 6-8 hours.
- Discard bay leaf. Season to taste with salt and pepper.

I've never had black-eyed peas before, so I didn't have any experience in preparing them. I did the recipe in the crockpot as written, but after 12 hours of cooking (half on low and half on high), the black-eyed peas hadn't softened. I think for this type of bean, it would have been better to cook in a pot on the stove top. I'll try it again sometime using the stove top method. I think I would also used canned, crushed tomatoes instead of fresh tomatoes, since the fresh tomatoes were out of season and not very tasty. Just my opinion on this.
