Double Chocolate Cabernet Cherry Cookies

"These came about when I was torn between Annacia's Recipe #210132 and cookies for a family gathering. They turned out soooo :yummy:, and aren't all that unhealthy to boot!"

  • Preheat oven to 375.
  • In a small bowl soak cranberries in wine for 5-10 minutes.
  • In a large bowl, cream sugars and Smart Balance.
  • Add egg and vanilla; beat well.
  • Make a well in the center of the bowl and combine dry ingredients, then incorporate into sugar mixture.
  • Fold in chocolate and cranberries.
  • Drop in even tablespoons onto a greased cookie sheet.
  • Bake 8-10 minutes then cool.

  1. Oh this dough is naughty! And the cookies themselves are great too :) They are a little sophisticated, but still just simple cookies. I wasn't sure whether to leave all the wine on the cherries or not, so I used about 1/3 of it. The dough was very stiff, almost roll-able, and made nice shapely cookies with rather elegant cracks across the top. I imagine if I had poured all the wine into the batter it would have resulted in a more typical choc chip cookie look. I made them for a party and they caused many of my friends to curse me for destroying their diets :) I was pleased. Will definitely be adding them to my list of regular cookies to make. Thanks!
