- 2 (15 ounce) cans black beans, very well drained
- 1 small red onion, finely diced
- 1 tomatoes, finely diced
- 1 small red pepper, finely diced
- 1 garlic clove, finely diced
- 2 teaspoons cilantro, finely diced
- 1 teaspoon red wine vinegar
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon chili powder
- 2 limes
- 3 tablespoons olive oil
- 1 tablespoon cilantro, chopped
- salt, pepper to taste
directions
- In a jar with a tight lid, shake together the vinegar, oil, the juice of both limes- freshly squeezed, salt and pepper to taste. Add the rest of the ingredients in a large bowl, and drizzle with the dressing. Mix well, adding salt/pepper to taste if desired. Garnish with fresh cilantro and enjoy!

Very tasty black bean salad - it has all the ingredients that we love! I doubled the cumin, chili powder and cilantro to balance out the tartness of the red wine vinegar and lime juice. This would be a great party food or just a nice healthy snack during the day. Thanks for the post! Made for the diabetic forum tag, December, 2011.
