  • Combine all of the ingredients in a bowl. Season to taste with salt and pepper.
  • Note Whether you start with fresh spears, or canned rings or chunks of pineapple, you should gently chop them to a medium dice.

  4. I found this salsa a bit too sweet for my taste, so I added more lime juice. I forgot (oops) to buy cilantro, so I added a pinch of oregano to add a little "herby" taste. What I liked most about it, is that it could be a great start to a ceviche-type salad by adding some seafood to it, maybe shrimp or whitefish chunks..yum. Thank you moma!   5. What a delicious salsa! I've never made my own before and I'm glad I tried this one. I've also never had jicama before and love the crunch it adds. The balance of sweet and spicy is just right. Made for Jammin' Java Jivers, ZWT5.
