Delicious Tomato Vodka Cream Sauce

"The is delicious over a hearty noodle. I have been tinkering with this recipe for years and finally may have gotten it right."

• Serves: 4-6

ingredients

• 6 large peeled roma tomatoes
• 3 tablespoons olive oil
• 1⁄2 cup heavy cream
• 2 tablespoons vodka
• 2 tablespoons fresh basil
• 2 minced garlic cloves
• 1⁄2 cup chopped onion
• salt and pepper

directions

1. Chop tomatoes and set aside.
2. Lightly saute onion and garlic in olive oil.
3. Add tomatoes.
4. Gently stir in cream and vodka.
5. Add basil.
6. Salt and pepper to taste.

You sure do have it right! I added more cream and then had to use a little corn starch to thicken a bit. The sauce was awesome! We had it with smoked salmon on Bow tie pasta. Thank you for a lovely sauce!
