- 4 boneless skinless chicken breasts
- 3 tablespoons olive oil
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1⁄2 medium onion, chopped
- 6 mushrooms, sliced
- 1 garlic clove, minced
- 1⁄2 cup marsala wine
- 1 (8 ounce) can tomato sauce
- 1 cup marinara sauce
- 2 tablespoons beef broth
directions
- Dunk the chicken breasts in egg and then dredge in seasoned flour (salt and pepper to taste).
- Bake for 25 minutes at 350 degrees.
- Heat olive oil in a saute pan over medium-high heat.
- Add in the vegetables and simmer about 5 minutes. Season with salt and pepper.(optional).
- Add the tomato and Marinara sauces and the beef broth, reduce heat to medium. Allow the flavors to meld, 2-5 minutes.
- Add the cooked chicken breasts to the sauce and heat through, about 2 minutes.
