Dave's Cajun Kielbasa

"My husband came up with this quick, healthy and tasty one dish dinner. I can't handle spicy foods, so we have tuned down the cajun seasonings, but feel free to add more if you like. You can also use beef or pork kielbasa if you prefer."

directions

  • Chop the kielbasa in half lengthwise and then in 1/2" pieces.
  • Combine all ingredients except the peas in a medium pot, adjusting the amount of water to the directions listed on your rice package.
  • Cook uncovered on high until it comes to a boil. Then turn down to low and cook for 20 minutes or per your rice package directions.
  • Remove from heat and add frozen peas. Mix peas in by fluffing rice with a large fork. Replace lid and let sit for a few minutes until the peas are just warm.

    What a quick and satisfying meal. I didn't think it would have as much flavor as it did. I added some crushed red peppers for some heat. Loved it. Thanks!

    This turned out really tasty. I didn't have cajun seasoning so used 1/2 tsp of red cayenne pepper. It was a lil too spicy for my daughter but the big folks liked it. I'll make it again but tweak the spiciness down during cooking. I used a turkey kielbasa from Trader Joes. I had my teen cook it so she did it in the crock pot for about 3 hours; made it even simpler.

    I printed this recipe and had my brother cook it and this was great! My brother said it was easy too. I must confess though we ate regular beef kielbasa, but I love the turkey as well, so when I make it I will follow exactly. Thanks for sharing.

    Four stars for speed, simplicity and taste. I used smoked sausage and didn't have peas, so I used some okra I had on hand. I personally would use more cajun seasoning next time. Thanks for sharing your husband's great recipe, puppitypup!!

    All I can say about this recipe is WOW !!!!.Here is how I prepared this great recipe. All I had was canola oil,so I browned just a 1/2 pound of skinless smoked sausage in it for a little color.Instead of water I used 2 cups of chicken broth,since the chicken broth was already salty I omitted the salt.Also I kept the amount of the rice the same and used some leftover peas and carrots I had in the freezer.For the cajun seasoning, I used Recipe#33092 it worked great.Instead of adding the veggies in step 4,I just added them with the rice and seasoning.I served this with Recipe#101038 and some fried okra.All together this made a very good "southern style comfort meal".Thank you for posting,this will be made again."keep Smiling :)"
