Curried Butter Bean Casserole

- 20 ounces frozen butter beans
- 3 slices bacon
- 1⁄2 cup chopped onion
- 1 garlic clove, crushed
- 1⁄2 teaspoon curry powder
- 10 3⁄4 ounces condensed cream of mushroom soup
- 1⁄2 cup sour cream
- 1⁄8 cup white wine or 1/8 cup dry sherry
- 3 1⁄2 ounces french's French fried onion rings
directions
- Cook beans until just tender (about 7 minutes) and drain.
- Cook bacon and remove from pan.
- In bacon grease, saute onion, garlic and curry powder until onion is tender.
- Mix soup, sour cream, and wine and add to pan. Heat but do not boil.
- Add beans and crumbled bacon and pour into a greased 1 1/2 quart casserole.
- Top with onion rings and bake uncovered at 325 degrees Fahrenheit for 25 minutes.
