Cucumber Sour Cream Salad

"Dicing the cucumbers will make this salad into a sauce for poached fish (with dill). Variation : For Cucumber salad with dill, stir 1 tsp dill seeds into Cucumber Sour Cream Salad. Omit sugar if you like a tart salard."

ingredients

• 1 tablespoon sugar
• 1 1⁄2 teaspoons salt
• 1 cup sour cream
• 3 tablespoons grated onions
• 2 tablespoons white vinegar or 2 tablespoons lemon juice
• 4 1⁄2 cups thinly sliced peeled cucumbers (3 large, 6 medium)

directions

1. Blend together sugar, salt, sour cream, onion and vinegar.
2. Stir in cucumbers.
3. Chill at least 2 hours.
4. Serve in lettuce cups for salad or on the tray with other relishes.
5. Makes about 6 cups, the exact amount depending on the size of the cucumbers.
