  • Peel the cucumber; cut in half lengthwise. Scoop out the seeds with a spoon, (a grapefruit spoon works great). Cut each half lengthwise into four strips; set aside. In a small mixing bowl, combine the cream cheese, mustard and the dill. Spread about 2 tablespoons over each ham slice. Place a cucumber strip on the wide; roll up TIGHTLY jelly-roll style. Cut off any cucumber that extends beyound the ham slice. Wrap tightly in plastic wrap and refrigerate for at least 2 hours. Cut into 3/4-in. slices.

  1. These are delicious! I love the dill weed flavor along with the mustard. I did have a hard time rolling them tightly, but after the 3rd one, I realized I had purchased the wrong kind of ham. I had purchased the prepackaged ham and these slices seem to be to thick. Next time I will purchased the very thinly sliced deli ham. I believe this will make rolling them tightly easier. Once again these are delicious and would make a great presentation at a brunch, shower or tailgating! Thanks Leezah4! :)
