Crushed Peppermint Creams

"This recipe is from a book my mom gave me called Gifts of Good Taste. I made these for a cookie/candy exchange. This did make 7 dozen for me. No baking. With a kitchen-aid this is so quick to make. Just melt in your mouth goodness. Give it a try and tell me what you think!"

  • In a large bowl, beat marshmallow creme, butter, and vanilla extract until well blended.
  • Gradually add confectioners sugar until mixture is well blended.
  • Knead mixture by hand 2 to 3 minutes.
  • Add crushed peppermint candies.
  • Shape teaspoonfuls of candy into 3/4-inch balls.
  • Place on a baking sheet lined with wax paper.
  • Chill 1 hour or until firm.
  • Melt chocolate chips and candy coating in the top of a double boiler over hot water.
  • Using a fork, dip candies halfway into melted chocolate, shaking off excess chocolate.
  • Return to baking sheet lined with wax paper.
  • Chill until chocolate hardens.
  • Store in airtight container in a cool place.
