Crunchy Delicious Waffles

- 1 3⁄4 cups flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1⁄2 teaspoon salt
- 3 large eggs, well beaten
- 4 -16 tablespoons unsalted butter, melted
- 1 1⁄2 cups milk
directions
- In a large bowl whisk together flour, baking powder, sugar, and salt.
- In another bowl whisk together eggs, butter (the more butter you use the crunchier they'll be, I find that 8 tbsp is perfect), and milk.
- Warm melted butter may separate into flaky clumps when mixed with milk. I just stick it in the microwave for 1 minute then stir and the lumps will go away.
- Make a well in the center of the dry ingredients and pour in the egg/milk mixture.
- Gently whisk together just until combined.
- Baking time and amount of batter will depend on your individual waffle maker. I use about a cup of batter for 2 waffles and mine take about 3 1/2 minutes to bake. I like to bake mine until they are a dark golden brown. Cooking spray usually isn't needed if you use 8 tbsp or more butter in the batter.

These were wonderful! Almost as easy to make as using a mix and far superior. I didn't have unsalted butter, but cut the salt almost in half. Thought Curt was going to pop he ate so many. He has always preferred pancakes.....no more. He hadn't even finished his last waffle when he asked when I would make them again. I loved them too. Thanks Pismo for posting this great recipe.

<p>I live here in Utah with my wonderful husband & daughter. <br /> <br />I've been cooking since I was a kid, but really started to get interested in it over the last few years. I'm best at desserts and baking, but like to make just about anything. I especially love to entertain and cook for others. I'm not a picky eater and will try anything once. I'm always making new recipes so it's pretty rare if I make anything twice. These days cooking has me taking on a new challenge to find things that a picky 2 year old will eat and my husband and I will eat as well. It's not always easy but the successes are definitely worth the effort!</p>
