I clipped this recipe out of a magazine a few years ago. I have never tried this recipe, but it sounds yummy!

- 1⁄4 cup dry breadcrumbs
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon curry powder
- 1⁄4 teaspoon pepper
- 8 chicken thighs
directions
- In a larger resealable plastic bag combine first seven ingredients. Add chicken a few pieces at a time, and shake to coat. Place chicken on baking sheet coated with nonstick cooking spray. Bake, uncovered, at 400 for 20 minutes. Turn chicken pieces; bake 15-20 minutes longer or until juices run clear.

Jan 31/10 - One of the most flavourful coatings for chicken we've had in a long time, great combination of spices, very tasty! and so easy to put together. I removed the skin on mine and sprayed the pieces with veggie spray before coating them and again after coating them. I will be making these again, thanks for posting. April 13/10 - made this again tonight with chicken breasts, worked beautifully. Also used the coating on cod fish and it was wonderful !! We love the curry flavour in combination with the other seasonings, thanks for posting.Reply
