- 2 lbs fresh haddock fillets
- 1 1⁄2 cups fresh tomatoes, chopped
- 1⁄2 cup green pepper, chopped
- 1⁄3 cup lemon juice
- 1 tablespoon cooking oil
- 2 teaspoons salt
- 2 teaspoons dry onion flakes
- 1 teaspoon basil leaves, crushed
- 1⁄4 teaspoon pepper, coarse
- 1⁄8 teaspoon hot sauce
directions
- Preheat oven to 500*.
- Place fillets in baking dish.
- Combine tomatoes, green peppers, lemon juice, oil, salt , onion flakes, basil leaves, pepper, and hot sauce.
- Spoon tomato mixture over fillets.
- Bake fillets for 5 -8 min or until fillets flake easily.
- Place fillets on a warm platter.
- Garnish with tomato and green pepper rings.
