Creamy Tuscan Garlic Chicken

- 1 1⁄2 lbs boneless skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1⁄2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon italian seasoning
- 1⁄2 cup parmesan cheese
- 1 cup spinach, chopped
- 1⁄2 cup sun-dried tomato
directions
- In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
- Add the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan and serve over pasta if desired.

My family Loves me a whole lot more today for making this chicken dish! It's Fantastic and the cream sauce is so very, very good! A company-worthy meal that will be memorable. I lightly seasoned the chicken with salt and pepper before browning and used a bit extra garlic powder and Italian seasoning. Just love the addition of spinach and sundried tomatoes in this. Thanks ChefPotPie for sharing this keeper with us! Made it for FYC.

It is amazing to have such a delicious dinner and have it come together so quickly. Both of us were exhausted last night but I decided to get this made anyway. DH was surprised how quickly it became our best dinner entrée so far this tour. Thank you for a great recipe. Sauce was decadent and wonderful.

Ah, I realise I misinterpreted the thinly sliced bit to be not so much scalloppine as thin slices, oops. Well, other than that, made as directed and delicious!!!!! This is very flavorful and rich. I appreciated how easily it went together to have a slight fancy dinner in the middle f the week. My husband forgot to buy the spinach so I left that out. I'm not always a fan of cooked spinach so I was ok with this. I portioned this down using 1 lb of chicken breast , as rich as it is we had enough for dinner and a small piece left over for the next night. made for SWT 2019 by one of the Sue Chefs
