  • Melt the butter.
  • Slice the parsnips and add to the melted butter.
  • Stew until the parsnips they are soft, approximately 30 minutes. Add a bit more butter or water if the pan is drying.
  • Gradually pour in 4 cups of the broth and boil for 20 to 30 minutes. Puree using an immersion blender, then add the remaining broth.
  • Season with the salt, pepper and cayenne pepper to taste. Bring to a boil then serve.
