Creamy Parsnip Soup

- 1⁄2 cup butter
- 2 lbs parsnips, peeled
- 8 cups vegetable broth
- salt & pepper
- cayenne pepper
directions
- Melt the butter.
- Slice the parsnips and add to the melted butter.
- Stew until the parsnips they are soft, approximately 30 minutes. Add a bit more butter or water if the pan is drying.
- Gradually pour in 4 cups of the broth and boil for 20 to 30 minutes. Puree using an immersion blender, then add the remaining broth.
- Season with the salt, pepper and cayenne pepper to taste. Bring to a boil then serve.
