- Cook penne according to directions. Reserve 1 cup or more cooking water.
- Heat oil over medium high heat. Brown sausage evenly on all sides. Remove from heat, slice and set aside.
- Add onion, Italian seasoning, sage, salt and pepper. Sauté until onion softens slightly.
- Add butter to onion mixture and melt. Add mushrooms. Cook until mushrooms are tender.
- Return sausage to pan. Add milk. Stir in 1/2 cup of reserved water and bring to a boil until sauce thickens.
- Add pasta and Parmesan to pan. Stir until sauce is creamy, adding more reserved water if necessary.
