ingredients

  • 3 swedes, about 1 kg, coarsely chopped
  • 125 ml pouring cream

directions

  • Place swede in pot, cover with water.
  • Bring to the boil over high heat, cook till tender about 30 minutes.
  • Drain well, pulse in food processor till smooth.
  • Return to saucepan, add cream.
  • Stir over medium heat till thick, about 3 minutes.
  • Season to taste.

    I love rutabagas (swedes), so I knew this was a go-to recipe for me. The cream (I used fat free half and half) cut the taste of the rutabaga a bit, making it a little more like a potato, but sweeter. Using the fat free half and half makes this a very healthy recipe! Thanks for sharing.
