  • Preheat oven to 350 degrees F. Coat a 9x13-inch metal baking pan with spray oil.
  • Combine oil, juice, sugars, eggs, and vanilla in a large mixing bowl; whisk until smooth.
  • In a separate bowl, combine flour, oats, baking soda, and salt. Whisk gently for 1 minute to combine.
  • Add flour mixture in batches to egg mixture. Stir well. Stir in cranberries and walnut pieces.
  • Batter will be stiff. Spread in prepared 9x13-inch pan.
  • Bake at 350 degrees F for 35-40 minutes, until golden brown, center is firm to touch, and toothpick inserted in center comes out clean.
  • Allow to cool slightly before cutting.
  • Keeps 1-2 days at room temperature, or 3-4 days when refrigerated.
