- 3 tablespoons vegetable oil
- 3 tablespoons orange juice
- 1⁄2 cup sugar
- 1⁄2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1⁄2 cups flour
- 1 1⁄2 cups rolled oats
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup fresh cranberries, whole
- 1 cup walnut pieces
directions
- Preheat oven to 350 degrees F. Coat a 9x13-inch metal baking pan with spray oil.
- Combine oil, juice, sugars, eggs, and vanilla in a large mixing bowl; whisk until smooth.
- In a separate bowl, combine flour, oats, baking soda, and salt. Whisk gently for 1 minute to combine.
- Add flour mixture in batches to egg mixture. Stir well. Stir in cranberries and walnut pieces.
- Batter will be stiff. Spread in prepared 9x13-inch pan.
- Bake at 350 degrees F for 35-40 minutes, until golden brown, center is firm to touch, and toothpick inserted in center comes out clean.
- Allow to cool slightly before cutting.
- Keeps 1-2 days at room temperature, or 3-4 days when refrigerated.
