Cranberry and Thyme Potato Salad
- Ready In:
- 6 medium potatoes
- 1 1⁄2 cups mayonnaise
- 3 tablespoons Dijon mustard
- 1 tablespoon sweet chili sauce
- 2 cups dried cranberries
- 4 stalks celery
- 1⁄2 red onion
- 1⁄4 cup fresh thyme
- boil the potatoes until soft and allow to cool.
- chop celery and onion.
- remove stems from thyme.
- mix everything together.
- more flavorful if its had time to sit for a few hours, but can be eaten immediately.
