Crab, Arugula and Lemon Garlic Mayo Sandwich

- 4 tablespoons mayonnaise
- 1⁄2 garlic clove, minced
- 1⁄2 teaspoon Dijon mustard
- 2 teaspoons fresh lemon juice
- salt and pepper
- 8 slices crusty white bread
- 1 1⁄2 ounces arugula
- 12 ounces fresh white crabmeat
directions
- Place the mayonnaise in a bowl and beat in the garlic, mustard, lemon juice and a few chili flakes if you wish. Season to taste.
- Spread the lemon aioli onto all the slices of bread.
- Arrange the arugula onto 4 of the slices of bread and pile the crabmeat on top.
- Season to taste then sandwich with the remaining slices of bread.
- Press down lightly, cut on the diagonal and serve.
