Cottage Cheese Icebox Cookies

"PREP TIME DOESN"T INCLUDE CHILL TIME: Found this recipe in a booklet from 1952 called Knudsen Recipes. I haven't tried these cookies yet, but they sound intriguing and look like they're simple to make. The cooking time is a bit odd - there's a huge gap between 10 and 20 minutes! I'll update the directions once I make them."

• Yields: 50-60 cookies

ingredients

• 1⁄2 cup butter, softened
• 1⁄4 cup cottage cheese
• 1 1⁄2 cups flour
• 2 teaspoons baking powder
• 1⁄2 cup sugar
• 1⁄2 teaspoon salt

directions

1. Blend butter and cottage cheese well.
2. Sift dry ingredients and add gradually to first mixture.
3. Form into thin roll and chill overnight.
4. Slice thinly and place on cookie sheet.
5. Bake at 350 degrees for 10-20 minutes.
