Compote of Spiced Fruits

  • Cut the plums and peaches in half and remove the centre stones
  • Pre-heat a wok on a low setting, then add the cider vinegar and dissolve the sugar. Add the spices, lemon zest and juice and salt
  • Add the fruits to the wok, cover and simmer gently for 15 minutes. Check regularly and top up with water as required to prevent the fruit from drying out.
  • Remove the heat and allow to cool, still covered
  • Pour into a container and refrigerate until ready to use.
