Coconut Milk With Bananas and Tapioca

"Very simple and delicious twist on regular tapioca pudding. Smells divine while cooking. Uses stevia to make it sugar-free, but you could also sub with regular sugar."

  • Mix 1 cup of coconut milk and stevia; bring to a boil. Throw in tapioca. Reduce heat and simmer 15 minutes, or until tapioca pearls are clear and puffed; stir frequently. Remove from heat and allow to cool slightly.
  • Meanwhile, place the banana chunks and 2 tablespoons of coconut milk in blender recipient and pulse until you have a slightly liquid puree.
  • Pour banana puree in glasses, then add the tapioca and coconut milk. Serve warm.
