Cleaned-Up Bacon Quiche

"Quiche is so good, but usually so guilty. This is an attempt to keep the taste without the guilt."

• Serves: 6

ingredients

• 1 unbaked 9-inch pie crust
• 9 slices bacon, cooked
• 1 medium onion
• 1 1⁄2 cups low-fat swiss cheese, shredded
• 1 (12 ounce) can fat-free evaporated milk
• 3⁄4 cup egg substitute
• 1⁄4 teaspoon salt
• 1⁄8 teaspoon pepper
• 1⁄4 teaspoon cayenne
• 1⁄2 teaspoon mustard powder

directions

1. Preheat oven to 375 degrees.
2. Crumble bacon and place in prepared pie crust.
3. Chop onion and saute using cooking spray.
4. Add to bacon in pie crust.
5. Add swiss cheese to onion and bacon and gently mix.
6. Mix remaining ingredients in a bowl, then pour gently over bacon mixture.
7. Bake for 45 minutes, until golden brown.
