"These are my absolute favorite cookies. They're really good cinnamon cookies with just a hint of almond flavor, which makes all the more tasty. I got them from "Teens Cook Dessert" and since I made them, my family's been asking for them all the time."

  • Place the butter, almonds, and sugar into a large bowl
  • Beat with an electric mixer on medium speed or until light and fluffy.
  • Add the flour.
  • Mix for 2 minutes, or until completely incorporated.
  • Cover the dough with plastic wrap and refrigerate for at least 2 hours.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Place the superfine sugar and cinnamon into a shallow bowl.
  • Mix well.
  • Scoop or roll the cookies into 3/4-inch balls
  • Place them about 1 inch apart n an ungreased baking sheet
  • Bake for 20 minutes, or until they just start to brown on the edges.
  • Cool for about 5 minutes
  • Roll them in cinnamon sugar.
  • Cool on parchment or waxed paper.
