  • Cream the butter and sugar, add egg and then the dry ingredients.
  • Put half the mixture into a flat tin and spread with a hot knife.
  • Mix the filling and spread over the cake mixture in the tin.
  • Cover with the remaining cake mixture.
  • Bake at 350°F for 20-30 minutes.

    I doubled the recipe and made this for dessert tonight and to celebrate my silver trophy win at allpoetry.com{Left a thread in EE if you'd like to read what I won and how}. I used nearly 5 tbsps. of cocoa powder, 1 cup of sugar, 1 cup of melted butter, 2 eggs, 2 tsps. of baking powder and 2 cups of all purpose flour. For the filling, I used 1 cup of grated fresh coconut, 1 cup of milk and 2 tbsps. of icing sugar. I baked this at 180C for 40 minutes and then let it sit inside the closed heated oven for 1 hour 15 minutes. It tasted yummy when I served it warm. Very very tasty! Thanks for a great dessert. My guests packed and took some home too:)
