  • 1 (15 ounce) box carrot cake mix
  • 1 cup lemonade
  • 23 cup coconut oil (or vegetable oil)
  • 3 eggs
  • 1 cup shredded coconut
  • 2 (16 ounce) containers cream cheese frosting
  • 1 (10 ounce) bag of multicolored marshmallows

  • Preheat oven to 350 degrees F.
  • In a large bowl, mix in the Carrot Cake Mix, Lemonade, Eggs, & Oil with a whisk.
  • Fold in the shredded Coconut with a spatula.
  • Pour the batter evenly between the 2 greased cake pans.
  • Bake the Chortletortes for 26 to 31 minutes or until an inserted toothpick comes out clean. Let them cool.
  • Once cooled down, assemble the cakes with Cream Cheese Frosting slathered on the first cake & the second cake on top. Then slather frosting on the outside of the cakes until it's all fully coated.
  • Carefully decorate the entire cake's surface with the Multicolored Marshmallows so that they stick to the frosting. This may take a while, but trust me, it'll totally be worth it. Stick some of the Marshmallows with toothpicks & skewers then stick them on the Chortletorte so as to resemble the image above.
  • It's ready to eat! It's easier than it looks!
