- 1 1⁄2 lbs lean stewing beef
- 1 1⁄2 lbs lean ground beef
- 2 onions, diced
- 1⁄2 green pepper, chopped
- 5 garlic cloves, finely chopped
- 1 celery rib, chopped
- 1 small carrot, grated
- 1⁄2 cup turnip, chopped
- 1⁄2 cup cabbage, shredded
- 1⁄4 cup pickled hot peppers, chopped
- 1 teaspoon cumin
- 3 tablespoons chili powder
- 2 teaspoons chilies
- 1⁄4 teaspoon coriander
- 28 ounces tomatoes
- 14 ounces tomato sauce
- 1 cup red wine
- 1 teaspoon oregano
- 16 ounces kidney beans
- 1 tablespoon cornmeal
- 10 ounces beef broth
directions
- 1. Brown minced beef and remove with slotted spoon to large casserole. Brown stewing beef and remove to casserole.
- 2. Saute onions, pepper, celery, turnip, cabbage in fat in pan.
- 3. Add cumin, chili powder,chillies,coriander,oregano and salt and pepper to taste. Add beef broth and cornmeal along with garlic, tomatoes and tomato sauce, wine, pepper rings, and rinsed kidney beans.
- 4. Oven 300 and bake for 2 hours.
