Chocolate-Raspberry Cheesecake

CRUST
- 1 (5 1/3 ounce) package pure butter shortbread cookies, crushed (about 1 1/4 cups)
- 2 tablespoons unsalted butter, melted
- 1⁄4 cup raspberry preserves, melted

CHEESECAKE
- 1 (10 ounce) package frozen raspberries, thawed
- 3 (8 ounce) packages cream cheese, softened
- 1⁄2 cup unsalted butter, softened
- 1 cup sugar
- 2 tablespoons all-purpose flour
- 1⁄2 cup sour cream
- 2 teaspoons lemon juice
- 2 eggs

TOPPING
- 6 ounces semisweet chocolate, chopped
- 1 tablespoon light corn syrup
- 1 tablespoon unsalted butter
- 1⁄2 cup whipping cream
- 1 1⁄3 cups fresh raspberries
directions
- Heat oven to 350°F.
- Wrap outside of 9-inch springform pan with heavy-duty foil.
- Combine crushed cookies and melted butter in small bowl; press into bottom of pan.
- Bake 8 to 10 minutes or until slightly darker in color.
- Cool slightly; gently spread preserves over crust.
- Puree thawed raspberries in food processor or blender until smooth.
- Strain through medium strainer, pressing with spatula to remove seeds Reserve 1/2 cup puree (Save remaining puree for another use.).
- Beat cream cheese and 1/2 cup butter at medium-low speed until smooth Beat in sugar and flour just until blended.
- Beat in sour cream, reserved raspberry puree and lemon juice.
- Beat in eggs one at a time.
- Pour over crust.
- Place springform pan in large shallow pan.
- Add enough hot tap water to come halfway up sides of springform pan Bake 40 to 45 minutes or until edges are puffed and top is dry to the touch Center should move slightly when pan is tapped but should not ripple as if liquid.
- Remove cake from water bath; remove foil.
- Cool completely on wire rack.
- Refrigerate overnight.
- Place chocolate, corn syrup and 1 tablespoon butter in medium bowl.
- Bring whipping cream to a boil in small saucepan.
- Pour over chocolate mixture; stir until melted and smooth.
- Let stand, stirring occasionally, until chocolate is cool but still pourable.
- Pour over cheesecake; refrigerate until set.
- Garnish with raspberries.
- Store in refrigerator.

OMG!!!! This is so good!!! I only made 1/2 of the recipe and used my mini spring-form pan (about 5-6 inches) and it worked out perfectly for us empty nesters. I am not a fan of the seeds from raspberries, and putting this through the medium strainer worked out perfectly (although timely). Just loved the flavor and it had the perfect amount of chocolate on top. Definitely would be a wonderful romantic dessert for Valentines Day!! I followed this as written, buying the Walker (Pure Butter) Scottish Shortbread Cookies, so good!!! Thanks for sharing the recipe and glad to have made it for "Newest Tag".

<p><span><strong>I am a stay at home mom to two wonderful boys; Joshua (8years), Kaiden (5 years), and baby GIRL, Madalynn (19 months)! I also have two fur babies (cats); Kobee, AJ; we had to put our youngest cat Sly down Jan 2014. :(. I am also married to my best friend, Jeff and have been since April 2005. I love cooking, hate cleaning and will do whatever I can to get out of it! I love grilling and baking. I do most of the grilling at my house, and bake for almost a week straight at Christmas time! I can make or will attempt just about anything, though I rarely make brownies, my husband's are the best! Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p>
<p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites. I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day! Over the past couple years with zaar, I have found tons of new recipes my family normally wouldn’t eat but have been happily surprised with new favorites.</strong></span></p>
<p><span><strong>I love to join in all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p>
<p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes. Most of all though are my kids; being home all day with them is fun and challenging, but I wouldn’t trade it for any salary!!</strong></span></p>
