Chocolate Pecan Bourbon Derby Pie

- 4 eggs
- 3 tablespoons butter (melted)
- 1⁄3 cup sugar
- 2⁄3 cup brown sugar
- 1⁄3 cup corn syrup
- 3 tablespoons maple syrup
- 1 ounce Bourbon
- 1 teaspoon vanilla extract
- 1 cup pecan halves
- 2⁄3 cup chocolate chips
- 9 inches pie shells (uncooked)
directions
- Preheat oven to 400.
- Beat the eggs.
- Pour in the melted butter and continue to beat until well blended.
- Add the granulated sugar and incorporate into a smooth mixture.
- Add the brown sugar and blend until all the lumps disappear.
- Stir in the corn syrup, bourbon and vanilla.
- Set the above mixture aside.
- Line a 9" pie shell with the choclate chips.
- Pour in the filling mixture.
- Place the pecan halves neatly to cover the filling.
- Place in oven and IMMEDIATELY lower the temperature to 275.
- Cooking time is at least an hour, when the filling in the center has set the pie is done.
