ingredients
- 1⁄4 cup cocoa powder
- 1⁄4 cup rice flour
- 1⁄4 cup plain flour, sifted
- 2⁄3 cup brown sugar
- 2 eggs, lightly beaten
- 60 g butter, melted
- 60 g good-quality white chocolate, finely chopped
- 12 Lindt chocolate balls, balls (see Note)
- icing sugar, to serve
directions
- Preheat oven to 180°C and line a 12-hole 2-tablespoon capacity flat-based patty pan with paper baking cases.
- Combine cocoa powder, flours and brown sugar in a bowl; make a well in the centre, add the eggs and butter and gently stir until all the ingredients are well-combined; stir in the white chocolate.
- Using half the mixture, one third fill each paper baking case, place one Lindt chocolate ball in the centre of each cake and then spoon the remaining mixture to completely cover each of the Lindt balls.
- Bake for 20 to 25 minutes or until the tops of the cakes are firm to touch. Cool for 15 minutes in the pan.
- Dust with icing sugar and serve warm or at room temperature.
- Note: You can use Lindt chocolate balls of any flavour or even a mixture of flavours. That way there will be an element of surprise when each Chocoholic's Cupcake is eaten!

Oh yum. I doubled the recipe and used the variety package to make Milk, Dark, and White chocolate, and Peanut Butter flavors. Well worth buying some rice flour to try out! I skipped out on the extra white chocolate but no one missed it. I particularly favored the pb ones. Maybe I'll try mint or raspberry next time, there will be a next time.

Well, Lindt milk chocolate truffles are our favorite chocolates, we buy them weekly. So for us, all the ingredients were at hand, and we knew this recipe would be a winner. The directions are so simple and the results are outstanding. A must try chocoholic's dream treat! Thanks so much for posting this awesome keeper recipe.

I dont want to give this a star rating because mine didnt come out right. I think it may have been because i had no rice flour so i doubled the plain flour :'( ! they were easy to prepare and i loooooved the taste of the batter! yum! one other thing that went wrong for me was that i had to make 2 batches of batter cause one wasnt enough. I dont know what happened, but my cupcakes dried out and came out hard. the taste was delish!!! and i LOOOOOOVED the chocolate ball surprise in the middle! sooooo delicious! i think i may try this again when i get some rice flour because the taste was great! it just didnt come out rite for me :'( thanks bluemoon! made for prmr

July 2008 update: VERY happy to be back on Zaar after about a two year absence due to having had no internet connection at home, and having been too unwell for a time so that getting re-connected wasn't even a priority!
